10-Minute Shrimp & Veggie Stir-Fry

A quick and healthy shrimp stir-fry packed with colorful veggies and flavor, perfect for busy weeknights.

  • 1 pound Shrimp, peeled and deveined
  • 2 cups Bell Peppers, chopped
  • 2 cups Broccoli Florets
  • 1 cup Carrots, thinly sliced
  • 1 cup Snow Peas
  • 3 cloves Garlic, minced
  • 1 tablespoon Fresh Ginger, grated
  • 3 tablespoons Soy Sauce
  • 1 tablespoon Sesame Oil
  • 1 tablespoon Honey
  • 1 tablespoon Rice Vinegar
  • 1 teaspoon Red Pepper Flakes (optional)
  • 2 cups Cooked Jasmine or Brown Rice, for serving
  • 1 cup Chopped Green Onions, for garnish
  • 2 tablespoons Toasted Sesame Seeds, for garnish

Instructions

  1. Prep your ingredients: Chop your bell peppers, slice the carrots, and mince the garlic and ginger.
  2. Heat a large skillet or wok over medium-high heat and add sesame oil.
  3. Cook the shrimp for about 2-3 minutes until pink and opaque, then set aside.
  4. Stir-Fry the garlic, ginger, and chopped vegetables for 3-4 minutes until vibrant and slightly tender.
  5. Combine the shrimp back into the pan and add soy sauce, honey, rice vinegar, and red pepper flakes, stirring for another 1-2 minutes.
  6. Heat the rice if cold and mix it into the stir-fry until warmed through.
  7. Garnish with green onions and toasted sesame seeds before serving.

Notes

This stir-fry is highly customizable. Feel free to swap shrimp for chicken or tofu and use any veggies you have on hand.
