30-Minute One Pot Chicken Parmesan

A quick and delicious one pot chicken parmesan that’s perfect for busy weeknights and guaranteed to impress your family and friends.

  • 1 lb boneless skinless chicken breast, cubed
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp Italian seasoning
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 2 cups marinara sauce
  • 1 cup heavy cream
  • 12 oz rigatoni pasta (uncooked)
  • 1 cup shredded mozzarella cheese
  • ½ cup freshly grated Parmesan cheese
  • 2 tbsp chopped fresh parsley
  • Red pepper flakes (optional)

Instructions

  1. Prep your ingredients by gathering everything to make cooking smoother.
  2. Sauté the chicken in olive oil with salt, black pepper, and Italian seasoning for about 5-7 minutes.
  3. Add the minced garlic and cook for about 30 seconds until fragrant.
  4. Pour in the chicken broth and marinara sauce; stir and bring to a simmer.
  5. Add the heavy cream and mix well to achieve a creamy sauce.
  6. Add the uncooked rigatoni, cover, and cook for 10-12 minutes until pasta is al dente.
  7. Mix in the shredded mozzarella and half of the Parmesan cheese until melted.
  8. Garnish with remaining Parmesan cheese, parsley, and red pepper flakes if desired.
