Baked Feta Eggs

A delightful and easy breakfast dish featuring creamy feta, flavorful cherry tomatoes, and perfectly baked eggs.

  • 1 cup Feta Cheese, crumbled
  • 4 large Eggs
  • 2 tablespoons Olive Oil
  • 1 cup Cherry Tomatoes, halved
  • 1 cup Spinach (fresh or frozen)
  • 2 cloves Garlic, minced
  • Salt, to taste
  • Pepper, to taste
  • Fresh Herbs (like Oregano or Basil), to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare a medium baking dish with a drizzle of olive oil.
  3. Add the halved cherry tomatoes into the dish, spreading them evenly.
  4. Crack the eggs into wells created among the tomatoes.
  5. Crumble feta cheese over the eggs, making sure to distribute evenly.
  6. Season with minced garlic, salt, and pepper.
  7. Add spinach around the eggs, nestling it gently.
  8. Sprinkle herbs on top.
  9. Bake for 20-25 minutes until egg whites are set and edges are browned.
  10. Serve warm with a drizzle of olive oil.

Notes

Feel free to experiment with seasonal veggies or use a different cheese if feta is not available.
