Cheesy Hamburger Potato Soup

A comforting, creamy, and cheesy soup perfect for chilly evenings, bringing warmth and nostalgia to the table.

  • 1 lb ground beef
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups potatoes, peeled and diced
  • 4 cups chicken broth
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • 1 cup heavy cream
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in your pot over medium heat. Once hot, toss in the diced onions. Cook, stirring occasionally, for about 3-4 minutes until they become translucent and fragrant. Then, add the minced garlic and sauté for another minute.
  2. Add in the ground beef. Using your wooden spoon, break it up as it cooks for about 5-7 minutes until nicely browned. Drain any excess fat if needed.
  3. Pour in the diced potatoes and mix everything together for a minute to soak in flavors.
  4. Stir in the chicken broth, cover, and simmer for about 15-20 minutes until the potatoes are tender.
  5. Mix in the milk and heavy cream, followed by the shredded cheese until melted.
  6. Taste and adjust salt and pepper as needed.
  7. Serve hot, garnished with fresh parsley or additional cheese if desired.

Notes

This soup stores well in the refrigerator for up to 3 days; just reheat gently. Adjust the thickness with additional broth or milk if needed.
