Cinnamon Sugar Blondies

Delightful cinnamon sugar blondies that are soft, chewy, and topped with a sweet, spiced sugar, perfect for any occasion.

  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 1/4 cup granulated sugar (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare an 8×8 inch square baking pan by greasing it or lining it with parchment paper.
  3. Mix the brown sugar and granulated sugar in a large mixing bowl. Pour in the melted butter and whisk until smooth.
  4. Add the eggs one at a time, mixing well after each addition. Then, pour in the vanilla extract and whisk until smooth.
  5. Incorporate the flour, baking powder, salt, and ground cinnamon in a separate bowl. Gradually fold this into the wet ingredients using a spatula.
  6. Finish mixing until combined but don’t over-mix; stop when there are a few streaks of flour left.
  7. Pour the batter into the prepared pan and smooth out the top with a spatula.
  8. In a small bowl, mix the granulated sugar with a sprinkle of cinnamon and sprinkle this mixture over the top of the batter.
  9. Bake for 20-25 minutes, until the edges look set and a toothpick inserted in the center comes out with a few crumbs.
  10. Cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

These blondies can be customized by adding ingredients like nuts, chocolate, or dried fruits. They also freeze well for up to 3 months.
