  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. Prep the ingredients: Take a moment to gather and prep all your ingredients. This makes cooking smoother and more enjoyable.
  2. Sear the chicken: In a large skillet, add the olive oil over medium-high heat. Once hot, place the chicken breasts in the pan and let them sear for about 5-7 minutes on each side until golden brown.
  3. Sauté the veggies: When the chicken is done, remove it from the skillet and set it aside. In the same pan, toss in the chopped onion and minced garlic. Sauté them over medium heat for about 3-4 minutes until they’re soft and fragrant.
  4. Add the rice: Stir in the long-grain rice and sauté it for another minute, allowing it to absorb those delicious flavors.
  5. Pour in the broth and cream: Slowly pour in the chicken broth and cream, stirring well. Bring the mixture to a gentle boil, then reduce the heat to low.
  6. Return the chicken: Nestle the seared chicken breasts back into the skillet. Cover the skillet and let it simmer for about 20-25 minutes, or until the rice is tender and the chicken is cooked through.
  7. Taste and adjust: As it cooks, taste the sauce and adjust seasoning with salt, pepper, or paprika.
  8. Serve and garnish: Remove from heat, sprinkle with freshly chopped parsley, and serve.
