Creamy Tomato Garlic Pasta

A comforting and delicious recipe for Creamy Tomato Garlic Pasta, perfect for busy weeknights.

Ingredients

Scale
  • 8 ounces pasta (spaghetti, penne, or gluten-free)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 2 cups tomatoes, diced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Boil the Pasta: Start by bringing a large pot of salted water to a rolling boil. Toss in your pasta and cook according to the package instructions until it’s al dente. Stir occasionally and reserve about 1 cup of pasta water before draining.
  2. Saute the Garlic: In a large skillet over medium heat, pour in the olive oil. Add the minced garlic and sauté for about 1 minute until fragrant but not browned.
  3. Add the Tomatoes: Stir in the diced tomatoes and let them cook down for about 5–7 minutes to create a sauce base.
  4. Incorporate the Cream: Slowly pour in the heavy cream, stirring gently. Simmer for another 2–3 minutes, and season with salt and pepper to taste.
  5. Combine Pasta and Sauce: Drain the pasta and add it directly to the sauce, tossing gently to coat. Use reserved pasta water if needed to adjust the sauce consistency.
  6. Finish with Parmesan: Stir in the grated Parmesan cheese until melted and well combined with the sauce. Adjust seasoning as desired.
  7. Serve It Up: Plate the creamy tomato garlic pasta in bowls, garnish with fresh basil, and enjoy!

Notes

For added protein, consider tossing in cooked chicken, shrimp, or sautéed mushrooms. To lighten the dish, substitute heavy cream with half-and-half or a non-dairy alternative like coconut milk.
