Easy Shrimp and Vegetables Skillet

  • 1 lb shrimp, peeled and deveined
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon paprika
  • 1 lemon, juiced
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prep your shrimp and veggies by washing them. Chop fresh vegetables and measure out frozen ones.
  2. Heat the olive oil in a large skillet over medium heat until it shimmers.
  3. Sauté the minced garlic for about 30 seconds until fragrant.
  4. Add the mixed vegetables and cook for 5-7 minutes until softened but still crunchy.
  5. Throw in the shrimp, seasoning them with salt, pepper, and paprika, and cook for 2-3 minutes on each side until pink.
  6. Finish with the lemon juice, stirring to meld flavors for an additional minute.
  7. Garnish with chopped parsley before serving.
