Easy Sloppy Joe Casserole

A heartwarming casserole combining the classic flavors of sloppy joes with creamy mashed potatoes, perfect for busy nights.

  • 45 large russet potatoes, peeled and cubed
  • 4 tbsp butter
  • 1/2 cup milk
  • 1/2 cup sour cream (optional)
  • Salt and freshly ground black pepper, to taste
  • 1 lb ground beef or ground turkey
  • 1/2 cup finely diced yellow onion
  • 1/2 cup diced green bell pepper
  • 2 cloves garlic, minced
  • 1 cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp Worcestershire sauce
  • 1 tbsp yellow mustard
  • 1/2 tsp smoked paprika
  • 1/2 tsp chili powder (optional)
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella (optional)
  • Fresh parsley or green onions, chopped, for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Boil the potatoes in a large pot with cold water and salt until fork-tender, about 15-20 minutes.
  3. Make mashed potatoes by draining the cooked potatoes and mashing them with butter, milk, and sour cream.
  4. Prepare the sloppy joe mixture by cooking the ground beef, onion, and green bell pepper in a skillet until browned.
  5. Add minced garlic, ketchup, brown sugar, Worcestershire sauce, mustard, smoked paprika, chili powder, and seasoning. Let simmer for 5 minutes.
  6. Assemble the casserole by spreading the sloppy joe mixture in a greased baking dish and layering the mashed potatoes on top.
  7. Add shredded cheddar and mozzarella cheese on top of the mashed potatoes.
  8. Bake in the oven for 25-30 minutes until the cheese is bubbly and lightly golden.
  9. Garnish with freshly chopped parsley or green onions before serving.

Notes

You can prepare the meat and mashed potatoes ahead of time and assemble the casserole right before baking. This dish also stores well for leftovers.
