French Onion Chicken Orzo Casserole

  • 2 cups cooked shredded chicken (rotisserie works well)
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon black pepper
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream (or half and half for a lighter option)
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Optional: 1/2 teaspoon Worcestershire sauce or balsamic glaze

Instructions

  1. Caramelize the Onions: In a large skillet, melt the butter and olive oil over medium heat. Add the onions, sprinkle with sugar and salt, then stir occasionally for 20-25 minutes until golden brown.
  2. Add Garlic and Cook: Once caramelized, add minced garlic and cook for another 2 minutes.
  3. Combine with Orzo: Stir in orzo, thyme, and black pepper. Cook for 1 minute to toast the pasta lightly.
  4. Pour the Broth and Cream: Add chicken broth and heavy cream, bring to a boil, then simmer for about 10 minutes until orzo is al dente.
  5. Add Chicken and Cheese: Stir in shredded chicken and mozzarella cheese.
  6. Transfer to Baking Dish: Preheat oven to 350°F (175°C), pour the mixture into a greased casserole dish. Top with Parmesan cheese.
  7. Bake to Perfection: Bake for 20-25 minutes until bubbly and golden brown.
  8. Serve and Enjoy: Let sit for a few minutes before serving warm, garnished with fresh thyme or parsley.
