Ultimate Grilled Cheese Burrito

A comforting mashup of grilled cheese and burrito flavors, loaded with savory beef, rice, and melted cheeses.

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup cooked white rice
  • 1/2 cup sour cream
  • 1/2 cup nacho cheese sauce
  • 1/4 cup chipotle sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella
  • 4 large flour tortillas
  • Butter or oil for grilling

Instructions

  1. Cook the beef: In a large skillet, heat a drizzle of oil over medium-high heat. Add the ground beef, breaking it apart with a spatula. Cook until it’s browned and cooked through, about 5-7 minutes.
  2. Spice it up: Once your beef is beautifully browned, sprinkle in the taco seasoning and add a splash of water (about 1/4 cup). Mix it until the beef is thoroughly coated in the spices.
  3. Assembly line: Transfer the beef to a mixing bowl. In the same pan, add the cooked white rice, sour cream, nacho cheese sauce, and chipotle sauce. Mix until creamy and well-combined.
  4. Tortilla time: Grab a large tortilla and lay it flat. Spoon a generous scoop of your mixture in the center, then sprinkle some shredded cheddar and mozzarella over the top.
  5. Rolling it up: To roll your burrito, first fold in the sides, then roll it up tightly from the bottom.
  6. Grill until golden: In the same skillet, melt a little butter over medium heat. Place your burrito seam-side down in the skillet and grill until golden brown, about 2-3 minutes.
  7. Slice and serve: Once both sides are golden, remove the burrito from the skillet. Let it sit for a minute, then slice in half and serve.

Notes

Serve with a dollop of sour cream and salsa. You can customize with additional toppings like avocado or cilantro.
