Sweet and Smoky Honey BBQ Chicken Rice

A comforting and flavorful dish that combines juicy chicken thighs with sticky honey barbecue sauce, fluffy rice, and vibrant vegetables.

  • 1 lb boneless, skinless chicken thighs or breasts (cut into bite-sized pieces)
  • 1 cup long-grain white rice (rinsed)
  • 2 cups chicken broth (low-sodium)
  • 1/2 cup BBQ sauce (smoky kind)
  • 1/4 cup honey
  • 1 cup frozen mixed vegetables
  • 2 tablespoons olive oil (divided)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and black pepper (to taste)

Instructions

  1. Heat up 1 tablespoon of olive oil in a large skillet over medium-high heat.
  2. Add the chicken pieces to the pan. Season them generously with salt, pepper, garlic powder, onion powder, and smoked paprika.
  3. Cook for about 5-7 minutes until the chicken is browned and cooked through.
  4. Once the chicken is cooked, remove it from the skillet and set it aside.
  5. Add another tablespoon of olive oil to the skillet.
  6. Pour in the rinsed rice, stirring it around to coat it with the leftover chicken juices.
  7. Now, pour in the two cups of chicken broth. Bring this mixture to a gentle simmer.
  8. While that’s cooking, mix together the BBQ sauce and honey in a small bowl.
  9. Add the chicken back into the skillet with the honey BBQ mixture and stir everything together.
  10. Add in the frozen mixed vegetables.
  11. Cover the skillet and reduce the heat to low. Let it simmer for about 15-20 minutes, or until all the liquid is absorbed and the rice is tender.
  12. Once everything is cooked, remove the skillet from heat and let it sit covered for about 5 minutes.
  13. Fluff the rice gently with a fork and mix everything together.

Notes

This dish can easily be modified for dietary preferences. Feel free to substitute chicken with chickpeas or tofu for a vegetarian option.
