Honey Mustard Chicken Salad

A delightful mix of roasted chicken, creamy honey mustard dressing, crunchy greens, and juicy blueberries.

  • ¾1 cup plain Greek yogurt
  • 2 tablespoons yellow mustard
  • 2 tablespoons Dijon mustard
  • 23 tablespoons honey
  • 1 teaspoon lemon zest
  • Pinch kosher salt
  • Pinch ground black pepper
  • 4 boneless skinless chicken breasts
  • ¼ cup soy sauce (or tamari or coconut aminos)
  • 2 tablespoons extra virgin olive oil (or avocado oil)
  • 2 teaspoons Worcestershire sauce
  • 2 teaspoons garlic, minced
  • 1 teaspoon lemon juice
  • 4 cups romaine lettuce, chopped
  • 1 ½ cups blueberries
  • 1 cup gorgonzola cheese, crumbled
  • 1 cup slivered almonds
  • 1 cup bacon, crumbled
  • ½ cup dried cranberries (or cherries)

Instructions

  1. Marinate the Chicken: In a bowl, combine the soy sauce, olive oil, Worcestershire sauce, minced garlic, lemon juice, and lemon zest. Mix well to create a marinade. Place the chicken breasts in a large resealable bag or bowl and pour the marinade over it. Seal the bag or cover the bowl, and let it sit in the fridge for at least 30 minutes.
  2. Roast the Chicken: Preheat your oven to 400°F (200°C). Remove the chicken from the marinade and place it on a baking sheet lined with parchment paper. Season with a pinch of kosher salt and ground black pepper. Bake for 20-25 minutes until cooked through and reaches an internal temperature of 165°F (75°C). Let it cool before shredding.
  3. Make the Honey Mustard Dressing: In a bowl, whisk together Greek yogurt, yellow mustard, Dijon mustard, honey, lemon zest, kosher salt, and ground black pepper until smooth and well-combined. Adjust ingredients to taste.
  4. Assemble the Salad: In a large bowl, combine the chopped romaine lettuce, shredded chicken, blueberries, crumbled gorgonzola cheese, slivered almonds, crumbled bacon, and dried cranberries. Drizzle with the honey mustard dressing and toss gently to coat.

Notes

Serving suggestion: Serve in colorful bowls and pair with rustic bread or crackers. For a fancy touch, add a glass of chilled white wine.
