  • 1/2 cup buffalo sauce (divided)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and black pepper (to taste)
  • 3/4 cup plain flour
  • 2 large eggs (beaten)
  • 1 cup breadcrumbs (panko or regular)
  • 1/2 cup cooked bacon (crumbled)
  • 8 oz mozzarella cheese (cut into cubes)
  • Vegetable oil (for frying)

Instructions

  1. Prep Your Ingredients: Gather everything on your counter. Chop mozzarella into cubes and crumble bacon.
  2. Mix the Chicken Filling: Combine ground chicken, 1/4 cup buffalo sauce, garlic powder, onion powder, paprika, salt, and pepper in a bowl.
  3. Add in the Good Stuff: Stir in crumbled bacon and mozzarella cubes to the chicken mixture.
  4. Create Your Bombs: Form a generous scoop of the mixture around a mozzarella cube, ensuring it is completely enclosed.
  5. Breading Station Time: Roll each bomb in flour, dip in beaten eggs, then roll in breadcrumbs.
  6. Heat Your Oil: Heat vegetable oil in a pot to 350°F (175°C).
  7. Fry Those Bites: Fry bombs in batches for 4-5 minutes per side until golden brown.
  8. Sauce and Serve: Toss fried bombs in the remaining buffalo sauce or serve on the side.

Notes

For a lighter version, brush the bombs with olive oil and bake at 375°F for 25 minutes. Customize with different sauces and toppings.
