Irresistibly Indulgent Carrot Cake Cream Cheese Bars

  • 1 cup all-purpose flour

  • 1 large egg
  • 0.5 cup unsalted butter, softened
  • 1 cup freshly grated carrots
  • 4 ounces cream cheese, softened
  • 1 large egg yolk
  • 0.5 cup granulated sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. Mix the softened butter and light brown sugar until light and fluffy.
  3. Add in the egg and vanilla extract, mixing until fully combined.
  4. Incorporate the all-purpose flour, kosher salt, ground cinnamon, ground nutmeg, and baking powder, folding gently.
  5. Stir in the grated carrots until evenly distributed.
  6. Create the cream cheese filling by mixing softened cream cheese, granulated sugar, and egg yolk until smooth.
  7. Combine half of the carrot cake batter in the baking pan, layer with cream cheese mixture, and top with remaining batter.
  8. Bake for 25-30 minutes or until edges are golden and a toothpick comes out clean.
  9. Cool the bars in the pan for 10 minutes, then transfer to a wire rack to cool completely.
