Keto Cheesy Broccoli Casserole

A heartwarming and delicious keto-friendly casserole packed with cheesy goodness and vibrant broccoli.

  • 1 large head of broccoli (about 2 lbs / 900g), cut into florets
  • 4 tbsp (56g) unsalted butter
  • 1 small yellow onion, finely chopped (about 1/2 cup / 75g)
  • 2 cloves garlic, minced
  • 4 oz (113g) cream cheese, softened
  • 1 cup (240ml) heavy cream
  • 1/2 cup (120ml) chicken broth (or vegetable broth)
  • 1/2 teaspoon salt (plus more to taste)
  • 1/4 teaspoon black pepper (plus more to taste)
  • 1/4 teaspoon garlic powder
  • Pinch of nutmeg (optional)
  • 2 cups (226g) shredded cheddar cheese, divided
  • 1/2 cup (56g) shredded parmesan cheese, divided
  • 1/4 cup (30g) almond flour
  • 2 tbsp (28g) melted butter

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the broccoli by blanching it in boiling water for 2 minutes, then transfer to an ice bath.
  3. Sauté the onion in butter over medium heat until translucent, then add garlic and sauté for another 30 seconds.
  4. Create the creamy mixture by adding cream cheese, heavy cream, and broth to the skillet, stirring until smooth.
  5. Stir in 1 ½ cups of shredded cheddar and ½ cup of parmesan until melted.
  6. Combine the blanched broccoli with the creamy cheese sauce.
  7. Make the topping by mixing almond flour and melted butter until crumbly.
  8. Assemble the casserole in a greased baking dish and top with almond flour mixture, and remaining cheese.
  9. Bake for 25-30 minutes, until bubbly and golden brown.
  10. Cool for 5-10 minutes before serving.

Notes

Feel free to mix in leftover veggies, or add spices for extra flavor!
