Keto Strawberry Cream Cheese Cobbler

A deliciously flavorful low-carb dessert infused with fresh strawberries and a creamy filling, topped with a crumbly, buttery layer. Perfect for summer celebrations!

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup granulated erythritol or monk fruit sweetener
  • 1 tsp baking powder
  • 1/4 tsp xanthan gum (optional)
  • 1/4 cup unsalted butter, melted
  • 1/2 tsp vanilla extract
  • 8 oz cream cheese, softened
  • 1 large egg
  • 2 tbsp granulated sweetener
  • 1/2 tsp vanilla extract
  • 2 cups fresh strawberries, sliced
  • 1/4 cup granulated sweetener (for strawberries)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the strawberries by tossing them with 1/4 cup granulated sweetener and set aside.
  3. Make the filling by combining cream cheese, 2 tbsp of granulated sweetener, and 1/2 tsp vanilla extract, then beat until smooth.
  4. Add the egg and beat until just combined.
  5. Mix the dry ingredients in another bowl, then add to the cream cheese mixture and mix until a thick batter forms.
  6. Make the topping by stirring melted butter with the dry mixture until crumbly.
  7. Assemble the cobbler by pouring the strawberry filling into a greased baking dish and spoon the topping over it.
  8. Bake for about 30-35 minutes until golden brown and bubbly.
  9. Chill for 15-20 minutes before serving.

Notes

This cobbler can be made ahead of time and stored in the fridge before baking. It can also be frozen for up to 3 months.
