Layered Zucchini Ricotta Melts with Marinara

  • 1 cup ricotta cheese
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste
  • Olive oil for drizzling
  • Fresh basil for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the zucchini by slicing them into 1/4-inch thick rounds and lightly salting them to draw out moisture.
  3. Mix the ricotta cheese with a pinch of salt and pepper in a bowl.
  4. Assemble in a baking dish, layering marinara, zucchini, ricotta, and mozzarella until all ingredients are used.
  5. Bake covered with foil for 30 minutes, then uncovered for an additional 15 minutes.
  6. Let cool for about 10 minutes before serving.
