Mac and Cheese Bites

Delicious bite-sized macaroni and cheese snacks, perfect for parties or comfort food cravings.

  • 2 cups elbow macaroni
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 cups whole milk
  • 2 cups shredded cheddar cheese
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • Salt and pepper (to taste)

Instructions

  1. Cook the pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.
  2. Make the cheese sauce: In a saucepan over medium heat, melt the butter. Once it’s melted, whisk in the flour, stirring constantly for about 1-2 minutes. Gradually whisk in the milk and stir until thickened, about 4-5 minutes.
  3. Add the cheese: Remove from heat and add the shredded cheddar cheese, stirring until melted. Season with salt and pepper.
  4. Combine everything: In a large mixing bowl, combine cooked macaroni, cheese sauce, and eggs. Mix until well combined.
  5. Prepare to bake: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper. Form small balls with the macaroni mixture and place them on the baking sheet.
  6. Coat the bites: Roll each macaroni ball in panko breadcrumbs until evenly coated.
  7. Bake: Bake in the preheated oven for about 20-25 minutes, or until golden brown.
  8. Cool and serve: Allow the bites to cool for a few minutes before serving.

Notes

For extra crispy bites, spray lightly with cooking spray before baking.
