One-Pot Creamy Spicy Cajun Sausage Pasta

  • 12 oz penne pasta (or rotini, farfalle)
  • 2 cups chicken broth (or vegetable broth)
  • 1 cup heavy cream (or half-and-half, coconut milk)
  • 1 medium onion (yellow, white, or red)
  • 1 bell pepper (any color)
  • 3 cloves garlic (fresh or jarred)
  • 1 can (14.5 oz) diced tomatoes (or crushed tomatoes)
  • 1 tbsp Cajun seasoning
  • 1 tsp paprika (smoked is optional)
  • Salt and pepper to taste
  • 1 cup grated Parmesan cheese (for garnish)
  • 2 tbsp olive oil (or butter, avocado oil)

Instructions

  1. Prep your ingredients: Dice the onion and bell pepper, mince the garlic, and slice the sausage into coins.
  2. Sauté the base: In a large pot, heat olive oil over medium heat. Add onion and bell pepper; sauté for 3-4 minutes until translucent.
  3. Add the garlic and sausage; cook for another 2-3 minutes until sausage slightly browns.
  4. Spice it up: Stir in Cajun seasoning and paprika; cook for 1 minute.
  5. Bring in the pasta: Add penne, chicken broth, and diced tomatoes; stir to ensure the pasta is submerged.
  6. Cook the pasta: Boil, then reduce heat to low. Cover and simmer for 12-15 minutes, stirring occasionally.
  7. Creamy finish: Stir in heavy cream and let simmer until well combined.
  8. Cheesy goodness: Stir in Parmesan cheese until melted and incorporated.
  9. Season to perfection: Taste and adjust seasoning with salt and pepper.
