Potsticker Noodle Bowl

A savory noodle bowl combining the flavors of potstickers with vibrant veggies and juicy pork, all in a quick and easy weeknight meal.

  • 8 oz wide Lo Mein noodles, cooked and rinsed
  • 1 tablespoon peanut oil
  • 1 pound ground pork
  • 1/4 cup + 2 tablespoons sliced green onions
  • 1/2 cup low-sodium chicken broth
  • 3 tablespoons mirin
  • 2 tablespoons dark soy sauce
  • 1 tablespoon minced garlic
  • 2 teaspoons grated ginger
  • 1 teaspoon sesame oil
  • 1/2 teaspoon sriracha
  • 4 cups coleslaw mix

Instructions

  1. Cook the Lo Mein Noodles by boiling water, adding the noodles, and cooking according to package instructions for about 3-5 minutes. Rinse under cold water to stop the cooking process.
  2. Sauté the aromatics in a large skillet with peanut oil, adding minced garlic and grated ginger, stirring for about 30 seconds until fragrant.
  3. Brown the pork, breaking it up in the skillet, cooking for 5-7 minutes until fully cooked and crispy.
  4. Mix in the veggies, adding coleslaw mix and sliced green onions, stir-frying for another 3-4 minutes.
  5. Create the sauce by mixing chicken broth, mirin, dark soy sauce, sesame oil, and sriracha; pour over the pork and veggies, simmer for a couple of minutes.
  6. Combine with noodles, gently folding in the cooked Lo Mein noodles, ensuring they are evenly coated with the sauce.
