Shrimp Scampi

A simple yet elegant dish of shrimp sautéed in a rich garlic butter sauce served over pasta, perfect for any occasion.

  • 12 oz Large shrimp (peeled and deveined)
  • 8 oz Angel hair pasta (or linguine)
  • 6 cloves Garlic (minced)
  • 3 tbsp Butter (unsalted preferred)
  • 2 tbsp Olive oil
  • 1/2 cup White wine (or chicken broth)
  • 2 tbsp Lemon juice (freshly squeezed)
  • 2 tbsp Fresh parsley (chopped)
  • 1/4 cup Parmesan cheese (grated)
  • 1/4 tsp Crushed red pepper (optional)
  • Salt and black pepper (to taste)
  • 1 tsp Lemon zest (optional)

Instructions

  1. Prepare the Pasta: Start by boiling a large pot of salted water. Add your angel hair pasta, cooking until al dente—around 2-4 minutes. Reserve about 1 cup of starchy pasta water before draining.
  2. Sauté the Garlic: In a large skillet, melt the butter and olive oil together. Add the minced garlic, sautéing for 1-2 minutes until fragrant.
  3. Cook the Shrimp: Add your shrimp to the pan, seasoning with salt and black pepper. Cook for about 2-3 minutes on each side until they turn pink and opaque.
  4. Add Wine and Seasonings: Pour in the white wine (or chicken broth) and lemon juice, stirring to combine. Let it simmer for 2-3 minutes.
  5. Combine Pasta: Once the wine has reduced, drain the pasta and toss it into the skillet with the shrimp and sauce. Stir gently, adding reserved pasta water as needed.
  6. Finishing Touches: Add the parsley, Parmesan cheese, red pepper flakes, and lemon zest to the pasta, combining until well-coated. Adjust seasoning if needed.
