Butter Chicken is a creamy, flavorful dish featuring tender chicken simmered in a rich sauce full of spices. It’s a culinary embrace that brings warmth and comfort.

  • 600 g Chicken Breast, diced
  • 150 g Natural Yogurt
  • 1 tsp Turmeric
  • 1 tsp Cumin
  • 1 tsp Garam Masala
  • 1 tsp Sweet Paprika
  • 1 tsp Salt
  • 1 tbsp Lemon Juice
  • 1 tbsp Oil
  • 2 tbsp Butter
  • 1 Onion, finely chopped
  • 2 Garlic Cloves, minced
  • 1 tbsp Grated Ginger
  • 1 tsp Coriander Powder
  • 1 tsp Garam Masala (for cooking)
  • 1/2 tsp Chili Powder (optional)
  • 400 g Crushed Tomatoes
  • 150 ml Cream (or Coconut Milk for lactose-free)
  • 1 tsp Sugar
  • Salt to taste
  • Fresh Coriander for garnish

Instructions

  1. Marinate the Chicken: In a mixing bowl, combine the diced chicken, yogurt, turmeric, cumin, garam masala, paprika, salt, and lemon juice. Mix thoroughly until the chicken is evenly coated. Let it sit for about 30 minutes (or even overnight for deeper flavor).
  2. Cook the Chicken: Heat the oil and 1 tablespoon of butter in a large skillet over medium-high heat. Once hot, add the marinated chicken. Cook for about 5-7 minutes, stirring occasionally, until the chicken is golden-brown and cooked through. Remove from skillet and set aside.
  3. Sauté the Aromatics: In the same skillet, add the remaining butter and toss in the chopped onion. Sauté for about 5-6 minutes until translucent. Add the minced garlic and ginger, stirring until fragrant, about 1 minute.
  4. Add the Spices: Add the additional garam masala, coriander powder, and optional chili powder to the skillet. Stir and let the spices toast for about 30 seconds.
  5. Incorporate Tomatoes: Pour in the crushed tomatoes, bring everything to a simmer, and let it cook for 10 minutes.
  6. Finish with Cream: Lower the heat, and stir in the cream (or coconut milk). Allow it to simmer for another 5 minutes until the sauce is creamy and luxurious. Stir in the sugar and adjust the salt to taste.
  7. Combine Chicken and Sauce: Add the cooked chicken back to the skillet, gently coating it in the sauce. Let it simmer together for another few minutes.
  8. Garnish and Serve: Remove from heat and garnish with fresh coriander before serving.

Notes

For a vegetarian version, substitute the chicken with paneer or chickpeas. Serve over basmati rice or with naan.
