Ingredients

  • Boneless, Skinless Chicken Breasts (4 pieces)
  • Fresh Herbs (1 cup total – parsley, rosemary, thyme)
  • Garlic (4 cloves, minced)
  • Lemon Zest (from 1 lemon) and Juice (from 1 lemon)
  • Olive Oil (3 tablespoons)
  • Salt (to taste)
  • Black Pepper (freshly cracked, to taste)
  • Optional: Red Pepper Flakes (a pinch)

Instructions

  1. Preheat your oven to 400°F (200°C) and pat the chicken dry with paper towels.
  2. Combine chopped fresh herbs, minced garlic, lemon zest, lemon juice, olive oil, salt, black pepper, and red pepper flakes in a mixing bowl.
  3. Slather the prepared marinade onto the chicken breasts, ensuring they are well coated.
  4. Sear the chicken in an oven-safe skillet with a tablespoon of olive oil for 4-5 minutes on one side until golden.
  5. Transfer the skillet to the preheated oven and bake for 15-20 minutes or until cooked through (internal temperature reaches 165°F).
  6. Remove from the oven and let the chicken rest for about 5 minutes before slicing.
  7. Serve the chicken over flavored rice, salad, or garlic mashed potatoes, drizzled with skillet juices.

Notes

For a vibrant meal, serve with roasted seasonal veggies or herbed couscous. Lemons add flavor when squeezed over the chicken.
