Zucchini Rollatini

Delicious zucchini rolled around a creamy ricotta filling, drizzled with marinara sauce and topped with cheese.

  • 2 large zucchinis
  • 1 cup ricotta cheese
  • 1 cup spinach (fresh or frozen, thawed and drained)
  • 1/2 cup grated Parmesan cheese
  • 1 cup marinara sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions

  1. Begin by washing your zucchinis thoroughly. Slice them lengthwise into thin strips, about 1/4 inch thick.
  2. Once cut, heat a grill pan or outdoor grill over medium heat, and lightly brush it with olive oil.
  3. In a mixing bowl, combine the ricotta cheese, drained spinach, garlic powder, Italian seasoning, half of the Parmesan cheese, and a pinch of salt and pepper.
  4. Preheat your oven to 375°F (190°C). Take a grilled zucchini strip and spoon a generous tablespoon of the ricotta filling at the one end. Roll it up gently.
  5. Once your rollatini are in the dish, pour your desired marinara sauce evenly over the top.
  6. Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for about 25 minutes.
  7. When ready, remove it from the oven and let it sit for about 5 minutes before serving.

Notes

You can prepare this dish ahead of time and refrigerate until ready to bake. Experiment with different fillings and sauces for variety.
