  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup buttermilk
  • 1 cup apple compote
  • 1/2 cup cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a muffin tin with cupcake liners.
  3. Mix the flour, baking powder, baking soda, salt, and cinnamon in a large bowl.
  4. Cream the softened butter and sugar together until light and fluffy.
  5. Add in the eggs one at a time, mixing well, then add the vanilla.
  6. Mix the dry ingredients alternately with the buttermilk.
  7. Fold in the apple compote gently.
  8. Scoop the batter into the lined muffin tin, filling each about 2/3 full.
  9. Bake for 18-22 minutes or until a toothpick comes out clean.
  10. Cool on a wire rack for 5 minutes before transferring.
  11. Make the frosting by beating the cream cheese and powdered sugar until smooth.
  12. Frost the cupcakes with the cream cheese frosting and sprinkle with cinnamon.
