  • 2.53 lbs Russet or Yukon Gold Potatoes
  • 1/2 cup (120ml) Freshly Squeezed Lemon Juice
  • 1/2 cup (120ml) Good Quality Extra Virgin Olive Oil
  • 46 cloves Garlic, minced
  • 2 tablespoons Dried Oregano
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1/2 cup (120ml) Vegetable or Chicken Broth
  • Fresh Parsley or Oregano, for garnish (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Prep your potatoes by washing and cutting them into wedges or chunks, about 1.5 inches thick.
  3. Make the flavor mixture by combining lemon juice, minced garlic, olive oil, oregano, salt, and pepper in a bowl.
  4. Toss the potato wedges in the lemon and olive oil mixture until well coated.
  5. Bake the potatoes on a baking sheet, pouring broth around them, for 45-50 minutes, flipping halfway through.
  6. Finishing touches include drizzling more olive oil and adding fresh herbs before serving.

Notes

You can prepare the potatoes ahead of time by tossing them in the lemon mixture and storing in the fridge until ready to roast.
