Pumpkin Cinnamon Roll Cookies

Warm and comforting cookies that combine the flavors of pumpkin and cinnamon rolls, perfect for fall.

  • 2 cups All-Purpose Flour
  • 1 cup Brown Sugar
  • 1 Egg
  • 1 teaspoon Vanilla Extract
  • 1 tablespoon Pumpkin Pie Spice
  • 1 teaspoon Baking Soda
  • 1/2 cup Semi-Sweet Chocolate Chips
  • 1/4 cup Sugar (for cinnamon swirl)
  • 2 teaspoons Ground Cinnamon (for cinnamon swirl)
  • 2 tablespoons Butter (for cinnamon swirl)

Instructions

  1. Preheat the Oven: Set your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix the Wet Ingredients: In a medium bowl, combine the pumpkin puree, brown sugar, egg, and vanilla extract, blending until smooth and creamy.
  3. Combine the Dry Ingredients: In another bowl, whisk together the flour, baking soda, and pumpkin pie spice. Slowly add this mixture into the wet ingredients, mixing until just combined.
  4. Add the Chocolate Chips: Fold in the semi-sweet chocolate chips using a spatula.
  5. Create the Cinnamon Swirl: Mix sugar and cinnamon in a small bowl. Spread melted butter over the cookie dough and sprinkle the cinnamon-sugar mixture evenly.
  6. Roll and Cut the Cookies: Roll the dough into a log and slice into 12-16 pieces.
  7. Bake: Place cookie pieces on baking sheet and bake for 10-12 minutes until golden on the edges.
  8. Cool and Enjoy: Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes
