Pumpkin Cookie Bars with Chocolate Chips

  • 2 cups all-purpose flour
  • 1 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon baking soda
  • 1 cup semi-sweet chocolate chips
  • 1/4 cup extra butter (for greasing)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare an 8×8-inch baking dish and grease it with some extra butter or line it with parchment paper.
  3. Mix the pumpkin puree, brown sugar, egg, and vanilla extract until well combined.
  4. Combine the flour, pumpkin pie spice, and baking soda in another bowl.
  5. Bring the dry mixture into the wet mixture, ensuring not to overmix.
  6. Pour the batter into the prepared baking dish and spread it evenly.
  7. Bake for about 25-30 minutes until a toothpick comes out with a few moist crumbs.
  8. Allow the bars to cool in the pan on a wire rack.

Notes

Dust with powdered sugar or drizzle with chocolate for added presentation. Can be stored in an airtight container for 3-4 days at room temperature.
