Ultimate Pumpkin Toffee Chocolate Chip Cookies

  • 2 cups all-purpose flour
  • 1 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon baking soda
  • 1 cup semi-sweet chocolate chips
  • 1 cup toffee bits

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the pumpkin puree, brown sugar, egg, and vanilla in a large mixing bowl and beat until smooth.
  3. Whisk together the flour, pumpkin pie spice, and baking soda in a separate bowl.
  4. Add the dry ingredients to the wet mixture gradually, mixing until just combined.
  5. Fold in the chocolate chips and toffee bits gently.
  6. Shape the dough into generous tablespoons on a lined baking sheet, leaving space between each cookie.
  7. Bake for 10-12 minutes or until the edges are lightly golden.
  8. Cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
