Baked Rhubarb Fritters

Delicious baked fritters with a delightful balance of sweet and tart rhubarb.

  • 1 cup rhubarb, diced
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup milk
  • 1 egg
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1 cup powdered sugar (for glaze)
  • 23 tbsp milk (for glaze)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare a baking sheet by lining it with parchment paper.
  3. Mix together the flour, sugar, baking powder, and salt in a bowl.
  4. Combine the milk, egg, and vanilla extract in another bowl, then mix in the diced rhubarb.
  5. Mix the dry ingredients into the wet ingredients gently until combined.
  6. Spoon the batter onto the prepared baking sheet, leaving space between each fritter.
  7. Bake for 15-20 minutes or until golden brown.
  8. Make the glaze by mixing powdered sugar and milk to the desired consistency.
  9. Glaze the fritters once they are slightly cooled.
  10. Serve warm and enjoy!

Notes

For best results, use fresh rhubarb. These fritters can be frozen and reheated in the oven.
