Banana Bread Blondies

Deliciously moist and buttery Banana Bread Blondies that are a perfect twist on traditional banana bread, easy to make and packed with flavor.

  • 1 cup mashed ripe bananas
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup melted butter
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts or chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare an 8×8 inch square pan by greasing or lining it with parchment paper.
  2. Mash the ripe bananas in a large mixing bowl until smooth, allowing for some lumps.
  3. Mix the melted butter, brown sugar, and granulated sugar into the mashed bananas until smooth.
  4. Add the egg and vanilla extract to the mixture and whisk until combined.
  5. Combine the flour, baking powder, baking soda, and salt in another bowl.
  6. Join the dry ingredients into the wet ingredients gently using a spatula.
  7. Optional: Fold in the chopped walnuts or chocolate chips if desired.
  8. Pour the batter into the prepared baking pan and spread it evenly.
  9. Bake for 25-30 minutes, or until lightly golden, and a toothpick inserted comes out clean.
  10. Cool in the pan for about 10-15 minutes, then lift out and let cool completely before slicing.

Notes

These blondies can be served as is, with caramel sauce drizzle, or with a scoop of vanilla ice cream.
