  • 1 cup (200 g) granulated sugar
  • 1 cup (240 ml) sour cream (or plain Greek yogurt)
  • ½ cup (113 g) unsalted butter, softened
  • 2 large eggs
  • 4 ripe bananas (mashed, about 2 cups)
  • 2 teaspoons pure vanilla extract
  • 2 cups (250 g) all-purpose flour
  • 1 teaspoon baking soda
  • ¾ teaspoon salt
  • ½ cup (60 g) chopped walnuts (optional)
  • ½ cup (113 g) unsalted butter (for frosting)
  • 4 cups (480 g) powdered sugar
  • 1½ teaspoons pure vanilla extract (for frosting)
  • 3 tablespoons milk (more if needed for spreading)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking pan or line it with parchment paper.
  2. Mix the softened butter and granulated sugar until light and fluffy in a large bowl. Add in the eggs, mashed bananas, sour cream (or yogurt), and vanilla extract; mix until combined.
  3. Combine the all-purpose flour, baking soda, and salt in a separate bowl. Whisk together.
  4. Fold the dry mixture into the wet ingredients with a spatula, being careful not to overmix. Add walnuts or chocolate chips if desired.
  5. Pour the brownie batter into the prepared pan and smooth out the top.
  6. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
  7. Cool the brownies in the pan for about 10 minutes before transferring them to a wire rack.
  8. Make the frosting by creaming together the unsalted butter and powdered sugar on low speed. Gradually add milk and vanilla until spreadable.
  9. Frost the cooled brownies, cut into squares, and enjoy!
