BBQ Chicken Sweet Potato Skillet

An easy one-pan dinner featuring tender roasted sweet potatoes, juicy chicken, and smoky BBQ sauce.

  • 2 Sweet Potatoes, diced
  • 2 cups Cooked Chicken, shredded
  • ½ cup BBQ Sauce
  • 1 Red Onion, sliced
  • 1 cup Corn (fresh, frozen, or canned)
  • 1 cup Cheddar Cheese, shredded
  • 2 tablespoons Olive Oil
  • Salt to taste
  • Black Pepper to taste
  • 1 teaspoon Smoked Paprika
  • 2 Green Onions, chopped

Instructions

  1. Prep your ingredients by peeling and dicing sweet potatoes and chopping onions.
  2. Heat a large skillet over medium heat and add the olive oil.
  3. Add the red onion; sauté for about 3-4 minutes until translucent.
  4. Toss in the diced sweet potatoes, season with salt, pepper, and smoked paprika. Sauté for 8-10 minutes.
  5. Mix in the chicken and corn, then drizzle with BBQ sauce, stirring to coat.
  6. Sprinkle the cheddar cheese over the mixture, cover, and let it melt for 3-4 minutes.
  7. Finish by removing from heat and garnishing with chopped green onions.

Notes

This dish is versatile; feel free to use leftover rotisserie chicken or substitute with chickpeas for a vegetarian option.
