  • 1 can black or kidney beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 can diced or crushed tomatoes
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp taco seasoning
  • 4 cups beef or chicken broth
  • 1/2 cup shredded cheese (for topping)
  • 1/2 cup sour cream (for topping)
  • 2 green onions, chopped (for garnish)

Instructions

  1. Prep your ingredients: Start by dicing your onion and mincing your garlic.
  2. Brown the beef: In a large pot over medium heat, add olive oil and toss in the ground beef. Cook until browned, about 5-7 minutes.
  3. Add onions and garlic: Sauté for another 3-4 minutes until onions are translucent.
  4. Incorporate the tomatoes: Add diced or crushed tomatoes along with their juices and stir well.
  5. Throw in the beans and corn: Stir in drained and rinsed beans and corn until well combined.
  6. Season it up: Add taco seasoning and stir to evenly distribute the spices.
  7. Pour in the broth: Add broth and bring to a gentle boil, then reduce heat to low and let it simmer uncovered for 20-30 minutes.
  8. Taste and adjust: Taste for seasoning adjustments.
  9. Serve it up: Ladle into bowls and top with cheese, sour cream, and green onions.
