Easy Butterscotch Muffins

Delicious and comforting butterscotch muffins, perfect for breakfast or a sweet treat any time of day.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 (3.4 oz.) pkg. instant butterscotch pudding
  • 1 (3.4 oz.) pkg. instant vanilla pudding
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 1 cup water
  • 4 eggs
  • 1 tsp. vanilla
  • 3/4 cup vegetable oil
  • 2/3 cup brown sugar, packed
  • 2 tsp. cinnamon
  • 1/2 cup nuts, ground (walnuts, pecans, almonds, etc.)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your muffin pan by greasing it or lining it with muffin liners.
  3. Combine the dry ingredients in a large bowl: flour, sugar, both pudding mixes, baking powder, cinnamon, and salt.
  4. Mix the wet ingredients in another bowl: eggs, water, vegetable oil, and vanilla.
  5. Combine the wet and dry mixtures until just combined.
  6. Fold in the ground nuts or chocolate chips.
  7. Scoop the batter into the muffin cups, filling each about two-thirds full.
  8. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  9. Cool in the pan for about 10 minutes before transferring to a wire rack.

Notes

Serve warm with butter for a delightful treat. Muffins can be frozen for later enjoyment.
