Authentic Jamaican Curry Chicken

  • 2 lbs chicken, cut into pieces
  • 2 tablespoons curry powder
  • 1 tablespoon allspice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 12 hot peppers, chopped
  • 1 can (14 oz) coconut milk
  • 1 cup chicken stock
  • 2 tablespoons oil for cooking
  • Fresh cilantro for garnish

Instructions

  1. Prep the chicken by rinsing under cold water and patting dry.
  2. Combine the chicken with curry powder, allspice, salt, and black pepper in a bowl.
  3. Heat oil in a large pot and sauté onions until translucent.
  4. Add garlic and hot peppers; cook for another minute.
  5. Brown the seasoned chicken in batches for 5-7 minutes per side.
  6. Pour in coconut milk and chicken stock, stir, and bring to a boil.
  7. Simmer the curry for 30-40 minutes until chicken is tender.
  8. Taste and adjust seasoning before serving.
  9. Garnish with freshly chopped cilantro and serve hot.

Notes

Serve over fluffy white rice or alongside steamed vegetables. Leftovers can be stored for 3-4 days in the fridge.
