Famous Brick Street Chocolate Cake

A decadent and rich chocolate cake that is perfect for any celebration and simple enough for a weeknight dessert.

  • 2 cups sugar
  • 1 cup butter (softened)
  • 1 1/2 teaspoons pure vanilla extract
  • 3 large eggs
  • 2 1/2 cups cake flour
  • 1 cup baking cocoa (sifted)
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1/2 cup instant chocolate pudding mix (small box)
  • 2 1/4 cups buttermilk
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup water
  • 1/2 cup butter (for frosting)
  • 1 teaspoon vanilla (for frosting)
  • 1 cup baking cocoa (sifted, for frosting)
  • 3 1/2 cups powdered sugar
  • 3 tablespoons heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prep your cake pans by greasing and flouring two 9-inch round pans.
  3. Mix the butter and sugar until fluffy.
  4. Add the eggs one at a time and then the vanilla extract.
  5. Combine the dry ingredients in a separate bowl.
  6. Blend the wet ingredients in another bowl.
  7. Alternate adding the dry and wet mixtures to the butter-sugar mixture.
  8. Fold in the pudding mix and chocolate chips.
  9. Pour the batter into prepared pans and bake for 30-35 minutes.
  10. Cool the cakes in the pans for 10 minutes before transferring to wire racks.
  11. Make the frosting by combining butter, cocoa, powdered sugar, and vanilla, adjusting with heavy cream as necessary.
  12. Assemble the cake with frosting between layers and on top and sides.

Notes

Serve with chocolate shavings, raspberries, or a scoop of vanilla ice cream for an extra treat.
