  • 1 tsp Black Peppercorns
  • 3/4 cup Extra Virgin Olive Oil
  • 2 tbsp Paprika
  • 2.5 tbsp Dried Rosemary
  • 2.5 tbsp Whole Coriander Seeds
  • 2.5 tbsp Red Chili Flakes
  • Coarse Sea Salt to taste
  • 1/2 Large Onion
  • 1 Bamboo Skewer

Instructions

  1. Marinate the Chicken: In a large mixing bowl, combine garlic, lemon juice, black pepper, olive oil, paprika, rosemary, coriander seeds, red chili flakes, and salt. Mix well to create a marinade. Add chicken, cover, and let it marinate for at least 1 hour or overnight.
  2. Prepare the Grill or Skillet: Preheat your grill to medium-high heat or a skillet over medium heat, oiling the grates or skillet to prevent sticking.
  3. Skewer the Chicken: Thread marinated chicken pieces onto bamboo skewers, leaving space in between for even cooking.
  4. Grill the Chicken: Place skewers on the grill or skillet. Cook for 6-8 minutes on each side, until internal temperature reaches 165°F (75°C).
  5. Slice and Serve: Once cooked, let the chicken rest, then slice it into strips.
  6. Assemble the Gyros: Take warm pita bread, fill with sliced chicken, fresh veggies, and drizzle with tzatziki sauce. Fold or wrap to serve.
