Grilled Chicken Skewers with Tzatziki Sauce

  • 1 lb Chicken breast
  • 1 Cucumber
  • 1 tbsp Dill (fresh)
  • 2 cloves Garlic
  • 1 tsp Oregano (dried)
  • 3 tbsp Lemon juice
  • Salt to taste
  • Pepper to taste
  • 3 tbsp Olive oil
  • 1 cup Greek yogurt
  • 4 Skewers

Instructions

  1. Prep the Marinade: In a bowl, mix together olive oil, lemon juice, oregano, and a sprinkle of salt and pepper. Whisk to combine.
  2. Marinate the Chicken: Cut the chicken into bite-sized chunks and add to marinade. Toss to coat and marinate for at least 30 minutes.
  3. Make the Tzatziki Sauce: Grate cucumber and squeeze out excess water. Combine with Greek yogurt, minced garlic, dill, and season to taste.
  4. Skewer the Chicken: Thread marinated chicken onto soaked skewers.
  5. Preheat the Grill: Heat grill to medium-high and grease the grates.
  6. Grill the Skewers: Cook skewers for about 10-12 minutes, turning occasionally until chicken reaches 165°F (75°C).
  7. Serve It Up: Let skewers rest for a few minutes and serve with tzatziki sauce.
