Homemade Blueberry Muffins

Delicious homemade blueberry muffins that are fluffy, bursting with fresh blueberries, and perfect for any occasion.

  • 1 cup fresh blueberries
  • 1 ½ cups all-purpose flour
  • ½ cup sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • ½ cup milk
  • ⅓ cup vegetable oil
  • 1 large egg
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare a muffin tin with paper liners or cooking spray.
  3. Combine the dry ingredients: flour, sugar, baking powder, and salt in a mixing bowl.
  4. Mix the wet ingredients: whisk together milk, oil, egg, and vanilla extract.
  5. Combine the wet and dry ingredients, folding gently until just mixed.
  6. Add the blueberries gently into the batter.
  7. Fill each muffin cup about ⅔ full with batter.
  8. Bake for 18-20 minutes or until golden brown.
  9. Cool in the pan for 5 minutes, then transfer to a wire rack.

Notes

For extra flavor, you can add lemon zest or use coconut oil instead of vegetable oil.
