Lemon Bar Cookie Cups

Delicious lemon bar cookie cups with a buttery crust and a zesty lemon filling, perfect for any occasion.

  • 2¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 cup unsalted butter (softened)
  • 1¼ cups granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 6 tablespoons unsalted butter (softened, for filling)
  • 1 cup granulated sugar (for filling)
  • 2 whole eggs and 2 yolks
  • ⅔ cup fresh lemon juice
  • Zest from 1 lemon
  • 2 tablespoons powdered sugar (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine flour, baking soda, and baking powder in a mixing bowl.
  3. Cream together softened butter and granulated sugar until light and fluffy.
  4. Beat in the egg and vanilla extract into the butter-sugar mix until fully incorporated.
  5. Gradually add dry ingredients into the wet, mixing just until combined.
  6. Take a mini muffin tin, lightly grease it, and scoop about a tablespoon of dough into each cup, pressing down to create cookie “cups.”
  7. Bake cookie crusts for 10-12 minutes until slightly golden.
  8. Whisk together softened butter and sugar for the filling until creamy, then add eggs and lemon juice and zest.
  9. Pour lemon filling into cooled cookie cups.
  10. Bake for an additional 15-18 minutes until filling is set.
  11. Allow to cool in the pan for about 10 minutes before removing and cooling on a wire rack.
  12. Dust with powdered sugar before serving.
