Impossible Lemon Pie

A delightful and easy-to-make lemon pie that perfectly balances sweet and tangy flavors.

Ingredients

  • 1 cup milk
  • 1 cup sugar
  • 1/2 cup all-purpose flour
  • 1/2 cup melted butter
  • 3 large eggs
  • 1 cup lemon juice
  • 1 tablespoon lemon zest
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the milk, sugar, melted butter, and eggs until well combined.
  3. Slowly add in the flour, lemon juice, lemon zest, baking powder, and salt. Whisk until smooth.
  4. Pour the batter into a greased pie dish.
  5. Bake for 30–35 minutes, until the edges are golden brown, and the center jiggles slightly.
  6. Remove from the oven and let cool for 10 minutes before slicing.
  7. Slice and serve warm or chilled with whipped cream or berries.

Notes

For a different twist, try using lime juice instead of lemon juice, or add berries or coconut to the batter.
