Orange and Cardamom Muffins

A delightful twist on classic muffins, bursting with orange flavor and aromatic cardamom.

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 tablespoon ground cardamom
  • ½ cup unsalted butter, melted
  • 1 cup orange juice
  • 1 tablespoon orange zest
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare a standard 12-cup muffin tin by greasing it or lining it with paper liners.
  3. Mix together flour, sugar, baking powder, salt, and ground cardamom in a large bowl.
  4. Combine melted butter, orange juice, orange zest, eggs, and vanilla in another bowl.
  5. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  6. Portion the batter into muffin cups, filling them about two-thirds full.
  7. Bake for 18–20 minutes, or until a toothpick comes out clean.
  8. Cool in the tin for five minutes before transferring to a wire rack to cool completely.

Notes

Best enjoyed warm with butter or powdered sugar. Can be frozen for up to three months.
