Cucumber Pasta Salad

A refreshing cucumber pasta salad bursting with vibrant colors and fresh ingredients, perfect for summer gatherings and weeknight dinners.

Ingredients

  • 8 ounces pasta (like rotini or penne)
  • 1 large cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley or basil for garnish

Instructions

  1. Cook the pasta by bringing a big pot of salted water to a boil, adding your pasta, and cooking according to package instructions until al dente (about 8-10 minutes).
  2. Prep the veggies by dicing the cucumber, halving the cherry tomatoes, and slicing the red onion.
  3. Make the dressing by whisking together olive oil, red wine vinegar, oregano, and a pinch of salt and pepper in a small bowl.
  4. Combine the cooked pasta with the diced cucumber, halved tomatoes, and sliced onions in a large mixing bowl.
  5. Dress the pasta and veggies with the dressing, tossing gently to coat.
  6. Add the crumbled feta cheese and mix gently.
  7. Garnish with fresh parsley or basil before serving.

Notes

This salad can be made ahead of time; just add the feta just before serving for maximum freshness.
