The Best Easy Cheesecake Recipe

A creamy, dreamy cheesecake that is easy to make and perfect for any occasion.

  • 1 1/2 cups graham cracker crumbs
  • 4 Tbsp granulated sugar
  • 6 Tbsp unsalted butter, melted
  • 1 tsp vanilla extract
  • 3 (8 oz) packages cream cheese, softened
  • 3/4 cup granulated sugar
  • 3 eggs, at room temperature
  • 2 tsp vanilla extract
  • Toppings: berries, caramel sauce, chocolate chips, lemon curd, or whipped cream

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter.
  3. Press the mixture into the bottom of a 9-inch springform pan.
  4. Bake the crust for about 10 minutes until lightly golden.
  5. In a large mixing bowl, beat the softened cream cheese until smooth.
  6. Gradually add granulated sugar, mixing until well blended.
  7. Add the eggs one at a time, mixing until just combined.
  8. Pour the cream cheese mixture over the cooled crust.
  9. Bake for 50-60 minutes, until the center is set but slightly jiggly.
  10. Once baked, turn off the oven and crack the door, letting the cheesecake cool for an hour.
  11. Refrigerate for at least 4 hours, preferably overnight.

Notes

For variations, try adding melted chocolate, fruit puree, lemon juice, or using nuts in the crust.
