Delightful Blackberry Honeydew Salad with Basil

  • 1 medium honeydew melon (cubed)
  • 1 cup blackberries
  • 4 large basil leaves (chiffonade cut)
  • 2 tbsp olive oil (extra virgin)
  • 2 tbsp lemon juice (freshly squeezed)
  • 2 tsp liquid honey (or maple syrup for vegan diet)
  • 1/2 tsp poppy seeds (optional)
  • Sea salt to taste

Instructions

  1. Prepare the honeydew melon by slicing it in half and scooping out the seeds with a spoon. Cut into wedges and then into cubes.
  2. Add the blackberries to the honeydew cubes in a mixing bowl.
  3. Prepare the basil by stacking the leaves, rolling, and slicing thinly to create chiffonade, then toss it into the bowl.
  4. Make the dressing by whisking together olive oil, lemon juice, honey (or maple syrup), and a pinch of sea salt, then drizzle over the salad.
  5. Garnish with poppy seeds if desired, and serve immediately.

Notes

Best served fresh. If preparing in advance, add dressing just before serving to maintain freshness.
