Blueberry Crisp

A warm and comforting dessert featuring a crispy oat topping and sweet, juicy blueberries, perfect for summer gatherings.

  • 1 cup sifted flour
  • ½ cup unsalted butter
  • 1 cup granulated sugar
  • ½ teaspoon salt
  • ½ teaspoon vanilla extract
  • ½ teaspoon baking powder
  • 4 cups blueberries
  • 2 tablespoons flour
  • 2 tablespoons sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the blueberries by tossing them with 2 tablespoons of flour and 2 tablespoons of sugar, then transfer to a greased 8×8 baking dish.
  3. Make the topping by combining 1 cup sifted flour, ½ cup butter, 1 cup sugar, ½ teaspoon salt, ½ teaspoon vanilla extract, and ½ teaspoon baking powder in a bowl until it resembles coarse crumbs.
  4. Layer the topping over the blueberries.
  5. Bake for about 35-45 minutes, until the topping is golden and the blueberries are bubbling.
  6. Cool for 10-15 minutes before serving.

Notes

Serve warm with ice cream or whipped cream. Optionally, sprinkle with chopped fresh mint or drizzle with honey for added flavor.
