Boursin Chicken Orzo

A creamy and comforting meal made with chicken, orzo pasta, and rich Boursin cheese, ready in just 30 minutes.

  • 1 tbsp Olive Oil
  • 1 tbsp Unsalted Butter
  • 1.5 lbs Boneless, Skinless Chicken Breast (cut into 1-inch cubes)
  • 1 tsp Salt (or to taste)
  • 0.5 tsp Black Pepper (or to taste)
  • 1 small Yellow Onion (finely diced)
  • 4 cloves Garlic (minced)
  • 1.5 cups Orzo Pasta (uncooked)
  • 4 cups Low-Sodium Chicken Broth
  • 5.2 oz Boursin Cheese (Garlic & Fine Herbs flavor, softened)
  • 3 cups Fresh Spinach (packed)
  • 2 tbsp Fresh Parsley (chopped, for garnish)

Instructions

  1. Heat your pan: In a large skillet over medium-high heat, combine the olive oil and unsalted butter.
  2. Sauté your chicken: Once the oil is shimmering, toss in the cubed chicken. Season with salt and pepper. Sauté for about 5-7 minutes, or until browned and cooked through.
  3. Add the aromatics: Add the diced onion and minced garlic to the skillet. Cook for another 2-3 minutes, stirring frequently.
  4. Bring in the orzo: Stir in the uncooked orzo pasta.
  5. Pour in the broth: Slowly add the chicken broth. Bring the mixture to a gentle boil.
  6. Cook the orzo: Reduce the heat to medium-low, cover, and simmer for about 10 minutes, or until the orzo is tender.
  7. Add the spinach & Boursin: Once the orzo is cooked, fold in the fresh spinach and the softened Boursin cheese.
  8. Final touches: Taste and adjust seasoning if needed. Garnish with fresh parsley.

Notes

For vegetarian variation, replace chicken with mushrooms or chickpeas. Boursin cheese adds unique flavor, but any herbed cream cheese can be used as a substitute.
