Broccoli Cheddar Soup

A creamy and flavorful Broccoli Cheddar Soup that warms you like an old friend.

Ingredients

  • 1 pound fresh broccoli, chopped
  • 2 cups sharp cheddar cheese, shredded
  • 2 carrots, sliced
  • 1 cup cream
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • Salt, to taste
  • Pepper, to taste
  • Pinch of nutmeg

Instructions

  1. Prepare your ingredients: wash and chop the broccoli into bite-sized florets, dice the onion, and mince the garlic.
  2. Sauté the aromatics: heat olive oil in a large pot, add onions and sauté until soft, about 5 minutes, then add garlic and sauté for another minute.
  3. Add the carrots and broccoli: toss in the sliced carrots and broccoli florets, cooking for about 3–5 minutes.
  4. Pour in the broth: add vegetable broth to fully submerge the vegetables and bring to a gentle boil, then reduce heat and simmer for 10 minutes.
  5. Blend it up: blend the soup until smooth or desired consistency is reached.
  6. Add the cream and cheese: return to heat, stir in cream, and gradually mix in cheese until melted and creamy.
  7. Serve it up: ladle into bowls and enjoy warm, optionally topping with extra cheddar and fresh herbs.

Notes

For a vegan version, substitute cream with coconut milk and use plant-based cheese.
